Serves 6

2 cups cooked spinach, or frozen spinach, defrosted (drained and chopped)

2 Tbs butter, melted

2 eggs

2 cups breadcrumbs

2 Tbs onion, finely chopped

2 cups Edam cheese, shredded

Nutmeg

Oil, to fry

Salt and pepper to taste

 

In a bowl, mix spinach, melted butter, 1 egg, I cup breadcrumbs, onion, and the cheese.

Season with nutmeg, salt and pepper to taste, mixing well.

Set your breading station, and bread the spinach balls. Fry until golden brown.
